  • For the Lamb:
  • 1 pound Lamb (ground)
  • 1/2 pound Beef (ground)
  • 2 tablespoons Mint (chopped)
  • 1/4 cup Parsley (chopped)
  • 2 tablespoons Tomato Paste
  • 2 Garlic cloves (roasted)
  • 2 tablespoons Red Onion (minced)
  • Salt
  • For the Sauce:
  • 2 cups Greek Yogurt
  • 1/4 cup Cucumber (peeled and diced)
  • 1 tablespoon Harissa Paste
  • 1 tablespoon Dill (chopped)
  • 1 tablespoon Mint (chopped)
  • 2 tablespoons Red Bell Pepper (minced)
  • Salt and Pepper
  • For the Garnish:
  • 1 Pita
  • 2 tablespoons Romaine (shredded) 
  • 1/4 Red Onion (sliced)
  • 1/4 Red Bell Pepper (sliced) 
  • 1 tablespoon Feta Cheese

    ingredients 1 pound Lamb (ground)
    1/2 pound Beef (ground)
    2 tablespoons Mint (chopped)
    1/4 cup Parsley (chopped)
    2 tablespoons Tomato Paste
    2 Garlic cloves (roasted)

    instructions For the Lamb: Combine all ingredients and roll onto wooden skewers in a long log shape, season with salt and grill until medium.

    1/4 cup Cucumber (peeled and diced)
    1 tablespoon Harissa Paste
    1 tablespoon Dill (chopped)
    1 tablespoon Mint (chopped)
    2 tablespoons Red Bell Pepper (minced)
    Salt and Pepper
    instructions For the Sauce: Combine all ingredients and adjust seasoning.

    1/4 Red Bell Pepper (sliced) 
    1 tablespoon Feta Cheese
    instructions Lightly grill pita, stuff with lamb kebab, lettuce, onion, peppers, feta cheese and top with sauce.
