1 cup Hot Italian Sausage (crumbled and cooked)
2 cup Sauerkraut (drained and chopped)
1/4 cup Freshly Grated Parmesan
2 cup Breadcrumbs for dredging
Salt and Freshly Ground Pepper
Vegetable Oil to fry
1/4 cup Chives plus extra for garnish (finely chopped)
1 cup Flour for dredging

instructions Preheat oil to 350F.
ingredients 1 cup Farmers Cheese 1 cup Hot Italian Sausage (crumbled and cooked) 2 cup Sauerkraut (drained and chopped) 1/4 cup Chives (finely chopped)
instructions Combine the farmer's cheese, sauerkraut, chives and sausage in a bowl. Mix well.
ingredients 1/4 cup Freshly Grated Parmesan Salt and Freshly Ground Pepper
instructions Add the parmesan and season with salt and pepper.
instructions Roll mixture into golfball-sized balls.
ingredients 2 cup Breadcrumbs for dredging 1 cup Flour for dredging 4 Eggs
instructions Have three bowls laid out, one with flour, one with the eggs (whisked) and the last with the breadcrumbs. Roll the balls in the flour, transfer to eggs and then dredge in breadcrumbs and transfer to refrigerator.
instructions Refrigerate until firm, at least an hour, and fry until golden brown, about 3 to 5 minutes. Transfer to a paper towel-lined plate to drain.
