ingredients 1 1/2 pounds Tomatillos (husked and rinsed)
instructions Bring a large pot of water to the boil. Season generously with salt. Boil the tomatillos until just soft, about 7 to 8 minutes. Then, drain and cool in an ice bath.

ingredients 3 Garlic cloves 1/2 bunch of Cilantro 1 Serrano Chili
instructions Add tomatillos to a blender, along with the garlic, cilantro and serrano chili (use half the chili if you don't like too much spice). Add a generous pinch of salt.

ingredients 2 Limes (juiced) Salt and Pepper to taste
instructions Blend until almost smooth but leave a bit of texture to the sauce. Squeeze in the lime juice and adjust seasoning.
