  • 24 ounces Italian Sausage Patties (Sweet or Hot)
  • 2 Red Peppers (Roasted/Peeled/Seeded/Julienned)
  • 2 Yellow Peppers (Roasted/Peeled/Seeded/Julienned)
  • 1 Medium Red Onion (Julienned)
  • 2 Garlic Cloves (Shaved paper thin)
  • 1/4 cup Extra Virgin Olive Oil
  • 2 cups Tomato Sauce
  • 2 cups Fresh Basil
  • 1 Pinch Dried Red Chili Flakes
  • Salt and Pepper
  • 1 Foccacia Rolls
  • 2 1-pound Balls Fresh Buffalo Mozzarella (Sliced thin)

    ingredients 2 cups Tomato Sauce
    instructions Simmer tomato sauce on very low heat, stirring often to remove as much moisture as possible without burning it to produce a tomato "jam", set aside.

    ingredients 2 Red Peppers (Roasted/Peeled/Seeded/Julienned)
    2 Yellow Peppers (Roasted/Peeled/Seeded/Julienned)
    1 Medium Red Onion (Julienned)
    2 Garlic Cloves (Shaved paper thin)
    1/4 cup Extra Virgin Olive Oil
    1 Pinch Dried Red Chili Flakes
    Salt and Pepper
    instructions In a medium sauté pan, heat oil, sauté the onions and garlic until caramelized about 8 to 10 minutes. Add the peppers and chili flakes, season with salt and pepper and simmer for 8 to 10 minutes to bring all the flavors together, set aside.

    ingredients 24 ounces Italian Sausage Patties (Sweet or Hot)
    1 Foccacia Rolls
    2 1-pound Balls Fresh Buffalo Mozzarella (Sliced thin)
    instructions Form the sausage into one large patty. On the grill or griddle or cast iron pan, cook the sausage patty making sure it is caramelized on both sides. When it is almost finished, top with the peppers and onions (spreading evenly) and the slices of the cheese. Let the cheese lightly melt over the patty and remove from heat. Lightly toast the focaccia in the oven.

    ingredients 2 cups Fresh Basil
    instructions To assemble, smear the tomato jam all over the cut side of the bottom piece of focaccia. Place sausage patty/pepper/ cheese on the bottom half of the focaccia. Before placing top piece back on, place 8 to 10 basil leaves on top of of the meat and peppers and close the sandwich. Secure with toothpicks, and slice into wedges to serve.
