  • 3 to 3 1/2 pound Chicken (giblets removed and then rinsed and patted dry)
  • 1 Lemon (halved)
  • 1 bunch thyme
  • 1 bunch Parsley
  • Salt and Freshly Ground Pepper
  • 1 bunch  sage
  • 1/4 cup extra virgin olive oil
  • 1/2 black truffle (sliced thinly)

    instructions Preheat oven to 400F.

    ingredients 3 to 3 1/2 pound Chicken (giblets removed and then rinsed and patted dry)
    Salt and Freshly Ground Pepper
    instructions Salt and pepper the inside and outside of the chicken.

    1 bunch Parsley
    instructions Stuff the lemon, thyme, and bunch of parsley inside the cavity of the chicken.

    1/4 cup extra virgin olive oil
    1/2 black truffle (sliced thinly)
    instructions Carefully separate the skin from the chicken, and brush with olive oil. Carefully stuff the sage leaves and truffle slices underneath the skin, evenly dispersed over the chicken.

    instructions Truss the chicken, and place on a roasting rack in a roasting pan and place into oven to roast for about 60 to 90 minutes, or until the internal temperature of the bird reaches 155F.
