ingredients
  • For the Pork:
  • 2-3 pounds Pork loin
  • 10.5 ounces Goat cheese
  • 2 cups Baby spinach (raw)
  • 1 cup Sliced mushrooms
  • 4 Sprigs Thyme
  • 1 pound Bacon
  • 5 Sun dried tomatoes (diced)
  • 1 Egg white (whisked)
  • Olive Oil
  • Salt and pepper
  • For the Sauce:
  • 1 Shallot
  • 2 tablespoons Butter
  • 1 cup Red wine
  • 1/2 cup beef stock
  • 2 Cloves Garlic
  • For the Roasted Garlic Mashed Potatoes:
  • 3 pounds Red Creamer Potatoes
  • 1 Garlic Bulb
  • 1 tablespoon Olive Oil
  • Salt and Pepper
  • 1/4 cup milk

  • step 1
    ingredients 1 cup Sliced mushrooms
    Olive Oil
    Salt and Pepper
    2 cups Baby spinach (raw)
    instructions For the Pork: Sauté mushrooms in a touch of olive oil. Season with salt and pepper. Once they've cooked slightly, add spinach and continue to cook until spinach is wilted. Remove from heat and squeeze out any moisture from spinach.

    ingredients Bacon
    instructions In a 350ºF oven, cook 2 pieces of bacon for filling 10 minutes, or until slightly crisp. Allow spinach, mushrooms and bacon to cool.

    ingredients 2-3 pounds Pork loin
    instructions Trim any excess fat off the pork loin. Cut a slit down the center of the pork, deep enough to open the loin, and pound until it's roughly 1/4 inch thick.

    ingredients 10.5 ounces Goat cheese
    5 Sun dried tomatoes (diced)
    4 Sprigs Thyme
    Salt and pepper
    instructions Chop cooled bacon and sun-dried tomatoes, then mix with goat cheese, mushrooms, spinach, and thyme. Place filling onto the pork, slightly off center, and roll to conceal filling. Season outside of pork with salt and pepper

    ingredients Remaining bacon
    1 Egg white (whisked)
    instructions Lay out remaining bacon on wax paper with each slice slightly overlapping, creating a sheet as long as the pork loin. Brush egg white on sheet of bacon, and place pork roll at one end. Roll, using wax paper to assist you, until the entire loin is covered with bacon. Tie with kitchen twine to secure (optional).

    instructions Place into a 500ºF for 10 minutes. Reduce heat to 350ºF and cook for approximately 15-20 minutes longer.  Let rest for 10 minutes.

    ingredients 1 Shallot
    2 tablespoons Butter
    2 Cloves Garlic
    1 cup Red wine
    1/2 cup beef stock
    instructions For the Sauce: Sauté shallots and whole garlic cloves in butter until softened, then add wine and stock. Reduce mixture by half.

    ingredients 3 pounds Red Creamer Potatoes
    instructions For the Roasted Garlic Mashed Potatoes: Boil 1 small bag of red creamer potatoes in water until you can insert and remove a fork.

    ingredients 1 Garlic Bulb
    1 tablespoon Olive Oil
    Salt and Pepper
    instructions Meanwhile, slice a bulb of garlic in half, drizzle with olive oil, season with salt and pepper and wrap in foil. Bake at 350ºF for 45 minutes, until garlic is soft.

    ingredients 1/4 cup milk
    Salt and pepper
    instructions Mash potatoes with 1 stick of butter, 1/4 cup of milk, roasted garlic, salt and pepper. Finish by blending with an immersion blender to remove lumps, if desired.
