Michael Symon's Beer Battered Fish and Chips

This good tasting, simple recipe for England's favorite take away dish is perfect for dinner tonight.

ingredients
  • 4 cup wondra flour plus 1 cup for dredging
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablspoon cornstarch
  • 3 eggs
  • 3/4 cup wheat beer
  • 1 1/2 Cup milk
  • salt a dash
  • 1 tablespoon chives
  • zest of 1 orange
  • 2 Quart frying oil (canola or peanut)
  • 1 1/2 pound lake perch or cod (cut into small pieces for kids and larger ones for adults)

  • Lemon wedges
  • Malt vinegar
  • Chips
  • Slaw

    ingredients 4 cup wondra flour
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    2 tablspoon cornstarch
    instructions In a medium bowl, stir together flour, baking powder, baking soda, and cornstarch.

    3/4 cup wheat beer
    1 1/2 Cup milk
    instructions In a large bowl, beat together eggs and milk.  Mix in beer.  Stir this wet mixture into the flour mixture.  Note: mixing wets into drys will avoid lumps.  Season with salt, chives, and orange zest.

    instructions In an electric deep fryer or a heavy saucepan, heat oil to 360-5 degrees F.

    ingredients 2 Quart frying oil (canola or peanut)
    instructions Season fish liberally with salt and dust with flour. Note: this flour coating will help the batter stick.  Coat fish in batter, and submerge in hot oil. Fry until golden brown, about 4 to 5 minutes. Serve with lemon wedges, malt vinegar, house fried chips and your favorite slaw.
