  • 1 recipe pomegranate-lime vinaigrette dressing (recipe can be found here)5 cups baby arugula
  • washed and dried1 Haas avocado
  • peeled and diced1/2 ripe papaya
  • peeled and diced1 small red onion
  • halved and sliced

    ingredients 1 tablespoon rice wine vinegar
    1/4 cup fresh pomegranate juice, seeds reserved for salad
    2 teaspoons lime juice, freshly squeezed
    1 tablespoon honey
    1 teaspoon Dijon mustard
    1 teaspoon garlic, minced
    Dash of cayenne pepper
    instructions Whisk first 7 ingredients (vinegar through cayenne) for dressing in a bowl. Let sit for 5-10 minutes to meld flavors.

    ingredients 1/2 cup olive oil
    Salt and pepper to taste
    instructions Whisk in oil and season to taste with salt and pepper. Set aside.

    ingredients 5 cups baby arugula, washed and dried
    1 Haas avocado, peeled and diced
    1/2 ripe papaya, peeled and diced
    1 small red onion, halved and sliced
    instructions Combine ingredients for salad in a large bowl. Add half of the dressing and toss thoroughly. Add additional dressing as needed or serve a little extra on the side.
