  • For the Bundt:
  • 3 cups Butter (softened)
  • 2 1/2 cups Sugar
  • 5 Large Eggs
  • 3 cups Cake flour
  • 1 teaspoon Salt
  • 1 1/2 teaspoons baking powder
  • 3/4 cup Buttermilk
  • 1 tablespoon Orange extract
  • Orange zest to taste
  • 1/3 cup Mandarin oranges (mashed with no juice)
  • Whipped Cream for layering
  • For the Syrup:
  • 1/3 cup Butter
  • 1/3 cup White Sugar
  • 1/3 cup Mandarin Light Syrup

    instructions For the Bundt: Pre-heat oven to 325 degrees F. Grease and flour bundt pan.

    2 1/2 cups Sugar
    5 Large Eggs
    instructions Beat butter until creamy.  Add sugar slowly until it's light and fluffy.  Add eggs 1 at a time until each is well incorporated.

    1 teaspoon Salt
    1 1/2 teaspoons baking powder
    instructions Sift flour twice.  First sift by itself and then sift the flour with the baking powder and salt.

    ingredients 3/4 cup Buttermilk
    instructions Add the flour mixture to the creamed butter mixture alternating with the buttermilk.  Begin and end with the flour mixture.

    ingredients 1 tablespoon Orange extract
    Orange zest to taste
    1/3 cup Mandarin oranges (mashed with no juice)
    instructions Beat at low speed and add orange extract, orange zest and oranges.

    instructions Pour into greased floured pan. Bake for 1 hour to 1 hour and 10 min until golden brown.

    ingredients Whipped Cream for layering
    instructions Make whipped cream and chill.

    1/3 cup White Sugar
    1/3 cup Mandarin Light Syrup
    instructions For the Syrup: In a sauce pan on low heat, add all the ingredients.

    instructions When the cake is done and still warm, brush the top of the cake with the above syrup mixture.

    instructions For Assembly: Cut nice size slices then cube those slices. Layer those cubes on the bottom of the bowl.  Add a couple of mandarin oranges over the cubes. Then layer with the whipped cream. Repeat.

    instructions Place back in the refrigerator until you are ready to serve.
