instructions Beat eggs in electric mixer until soft and foamy. Add the cream of tartar and salt and continue mixing until you have soft peaks. Next add sugar, 1 tablespoon at a time. Mix until you have still peaks. Fold in scraped vanilla bean and chopped chocolate.
