  • Whole Chicken (1 to 11/2) halved with the backbone and breastbone removed
  • Olive Oil
  • 8 quart Water
  • 1 1/2 cup Kosher Salt
  • 1 1/2 cup Brown Sugar
  • 1 Handful Peppercorns
  • 8 Bay Leaves
  • 1 tablespoon Smoked Paprika
  • 1  Lemon (juiced)
  • Salt
  • Freshly Ground Black Pepper

    ingredients Whole Chicken (1 to 11/2) halved with the backbone and breastbone removed
    8 quart Water
    1 1/2 cup Kosher Salt
    1 1/2 cup Brown Sugar
    1 Handful Peppercorns
    8 Bay Leaves
    Olive Oil
    instructions Boil 1 quart of water. Add Kosher salt, sugar, peppercorns, and bay leaves to boiling water. Once salt and sugar are dissolved, add mixture to 7 quarts of cold water. Stir to dilute and mix well. Drop the chicken pieces in the brine and let them sit overnight. Rinse, pat dry and store in extra virgin olive oil.

    Freshly Ground Black Pepper
    instructions Before cooking rub the chicken with the smoked paprika, lemon juice and season with salt and pepper.
