salt and pepper (to taste)
For the Poached Eggs:
1/4 cup white vinegar
2 quart water

instructionsFor the Bacon Pancakes: Sift together the dry ingredients. Whisk together the eggs, buttermilk, and butter. Add the dry mixture to the wet and stir to combine. Add chopped bacon and mix in.

instructions Add some of the reserved bacon fat to a skillet over medium low heat and ladle some of the pancake batter into the pan. Flip the pancakes when they begin to bubble around the edges. Cook for another 2 minutes and remove to a platter. Cover to keep warm.
