  • For the Chicken:
  • 1 3-pound Chicken (cut into 8 pieces)
  • Salt and Freshly Ground Pepper
  • Extra Virgin Olive Oil
  • For the Barbecue Sauce:
  • 1 cup Ketchup
  • 1/4 cup White Vinegar
  • 1/4 cup Brown Sugar
  • 2 tablespoons Butter
  • 1 tablespoon Worcestershire
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Jerk Chicken Rub
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Cayenne Pepper
  • For the Jerk Chicken Rub:
  • 3 tablespoons smoked paprika
  • 3 tablespoons sweet paprika
  • 2 tablespoons cayenne pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt

    ingredients 3 tablespoons smoked paprika
    3 tablespoons sweet paprika
    2 tablespoons cayenne pepper
    1 tablespoon onion powder
    1 tablespoon garlic powder
    1 teaspoon dried oregano
    1 teaspoon dried thyme
    1 teaspoon salt
    instructions For the Jerk Chicken Rub:  Mix all ingredients together.

    instructions For the Barbecue Sauce:  Mix all barbecue sauce ingredients (which includes the jerk chicken rub made above) in a small pot and simmer over a low heat for 15 - 20 minutes.  Adjust salt, if necessary.

    instructions For the Chicken: Preheat the grill or grillpan to medium-high heat.

    Salt and Freshly Ground Pepper
    Extra Virgin Olive Oil
    instructions Season the chicken on all sides with salt and pepper. Place on the grill and cook each piece for about 5 to 8 minutes per side, but check pieces for doneness, cooking for longer if necessary to cook through. Brush the pieces of chicken with barbecue sauce, or put the chicken in a bowl and toss with the sauce.
