Cannolis are an essential part of Sicilian cuisine, and have become an important part of Italian-American cuisine as well.  These small fried shells of pastry dough filled with sweet and cheesy cream are almost too easy to eat.  The first version of this dessert can be traced back to Palermo and were made as a special treat during Carnevale.  Now you can find them at your local Italian bakery, but just in case you want to make your own here are few favorite recipes.
