Daphne heads to Las Vegas to visit Fleur, the restaurant of renowned chef, Hubert Keller. Hubert shares with Daphne his secrets to preparing the lightest, air-iest, and most decadent chocolate soufflés. According to Hubert, many chefs began removing the chocolate soufflé from their menus because these chocolate desserts were no longer the latest hit in the culinary world. Hubert, however, rose to the occasion and brought about a soufflé comeback. He describes soufflé making as an art, and the key to a delicate, yet rich pastry is the quality of the chocolate.
Hubert’s expertise extends beyond the walls of the kitchen. Daphne had the chance to learn about Hubert’s other passion, deejaying. The chocolate duo plays a few tracks before heading back to the kitchen to sample their decadent confections.
